Hummus Veggie Rolls

Are you looking for an easy, yet healthy meal to take with you to work? Try these Hummus and Veggie Rolls! You can make them the night before, for an easier morning. Not only is it good for you, it tastes good too!


4 - 8-inch whole wheat or whole wheat sprouted tortillas (or gluten-free option)

1 cup Hummus (ideally home-made)

2 cups organic baby spinach, baby kale or arugula, washed and dried

¾ peeled and finely shredded organic carrot

1 cup grated organic cucumber


Place tortilla on a flat work surface. Spread ¼ cup of the hummus over the tortilla, leaving 1-inch border all the way around. Lay ¼ of the spinach (or kale, arugula), carrot and cucumber over the hummus. Roll up into a tube. Fix down the top edge with a smear of hummus. Trim the ends, and then slice the roll in half on the diagonal. Repeat with the remaining ingredients.

Serves 4.


· Add ½ diced avocado

· Flavor the hummus with a few basil leaves or with ½ red bell pepper
