Pamela's Energy Booster Treats


Recently I was experimenting with some of the ingredients I had in my fridge and came up with a super easy and quick energy booster treat. It's gluten and dairy free too and has no added sugar nor sweetener. You don't even have to use the oven, so you can taste these treats sooner rather than later :-) and I'm pretty sure you are going to be very happy about this!

So here it is:

Ingredients:

1 ½ cups pitted dates

½ tsp. vanilla extract, optional

1/2 cup raw slivered almonds

Unsweetened finely shredded coconut

Directions:

1. Place dates, almonds and vanilla extract (if used) in bowl of food processor; purée until a thick paste forms.

2. With your hands form little balls, about 1-inch wide.

3. Dust the balls with the shredded coconut and enjoy!

Note: You can refrigerate these treats for up to 5 days or freeze them if you make a big batch.
